Ingredients
- 2 English muffins, bagels, or rolls, split
- 4 slices bacon
- 2 large eggs
- 2 slices cheddar cheese (or American cheese)
- 1 tablespoon butter
- Salt and black pepper, to taste
- Optional: 2 teaspoons mayonnaise
- Optional: Hot sauce or ketchup
Instructions
1. Cook the Bacon
Place the bacon in a cold skillet over medium heat. Cook for 8–10 minutes, turning occasionally, until crispy. Transfer to a paper towel-lined plate, reserving about 1 teaspoon of bacon drippings in the pan if desired.
2. Toast the Bread
Spread the cut sides of your bread of choice with butter and toast them in a skillet or toaster until golden brown and crisp.
3. Cook the Eggs
Lightly butter the skillet (or use the reserved bacon drippings). Crack the eggs into the pan and season with salt and pepper. Cook to your preferred doneness.
4. Melt the Cheese
Place a slice of cheese over each egg during the last minute of cooking. Cover the skillet briefly so the cheese melts smoothly.
5. Assemble the Sandwiches
Spread mayonnaise on the bottom halves of the toasted bread. Layer each with two slices of bacon, a cheesy egg, and a dash of hot sauce or ketchup if desired. Top with the remaining halves.
6. Serve Warm
Enjoy immediately while the cheese is gooey and the bacon is crisp. Pair with fresh fruit, hash browns, breakfast potatoes, or a hot cup of coffee.
