Ingredients
For the Salad
- 1 (15 oz) can green beans, drained
- 1 (15 oz) can wax beans, drained
- 1 (15 oz) can kidney beans, drained and rinsed
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
For the Dressing
- 1/3 cup apple cider vinegar
- 1/4 cup olive oil
- 1/4 cup granulated sugar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Beans
Drain and rinse the beans thoroughly, then place them in a large mixing bowl with the sliced red onion and parsley.
2. Make the Dressing
Whisk together the apple cider vinegar, olive oil, sugar, Dijon mustard, salt, and black pepper until the sugar dissolves and the dressing is well combined.
3. Combine the Salad
Pour the dressing over the bean mixture and gently toss until all the ingredients are evenly coated.
4. Chill the Salad
Cover the bowl and refrigerate for at least 2 hours, stirring once or twice to allow the flavors to blend.
